I got this recipe from my friend Margaret years ago when we went camping. It has served me well over the years. I always just adjust it according to taste...maybe some more catsup, seasonings. Now that my family is larger, I tend to use a little more ground beef and just up the rest of the ingredients accordingly to stretch it a bit. And we like it on homemade rolls from my bread recipe. I usually serve it with sliced cucumbers and carrots. And in the days when there were such a thing as leftovers, it would freeze well.
1 pound ground beef
1 green pepper, chopped (optional)
1 onion, finely chopped
1 T. each sugar, mustard, vinegar
1 t. salt
3/4 c. catsup
1 can corn (optional)
1 can cooked kidney beans or other red bean
Brown ground beef in a little oil. Add green pepper and onion and fry for about 10 minutes. Add remaining ingredients and simmer for 20 - 30 minutes.
