I like this marinara sauce that comes from Giada De Laurentiis. This is a very quick sauce to throw together, and it's easy to keep the staples in your pantry.
2 cans tomato polpa
1/2 c. olive oil
1 onion, chopped finely
3 to 4 cloves garlic, minced
1 t. dried oregano
1 t. sugar
1 bunch of fresh basil (although I've also used frozen chopped basil that I harvested from my plant at the end of the summer)
In a blender, puree the polpa and basil. In a saucepan, heat the oil, and sautee the onions and garlic till tender. Stir in the the tomato puree, oregano, and sugar. Simmer over medium heat till sauce begins to thicken, about 10 minutes. Season with salt and pepper to taste.
