Apple and Gargonzola Salad

lettuce, your choice of kind
1 c. celery, sliced thinly
1 c. pancetta, fried
1 container Gargonzola, crumbled
1 Granny Smith apple, sliced thinly
1/2 c. chopped pecans (optional...or substitute walnuts)
1 c. sliced strawberries

Dressing:
1/2 c. mayo
1 c. olive oil (See my notes for changes!)
1/2 c. cider vinegar
3/4 c. sugar
1 T. mustard
1/2 T. black pepper
Whisk and chill.

My note: This dressing recipe makes a large quantity...too much for me. Plus I don't like all the oil. So I usually cut the recipe in half and just maintain the same proportions. It works for us.
