Balinese Cucumber Salad

I haven't consistently found rice vinegar in my grocery store here so I typically use a Kikoman Sushi seasoning that says "made with rice vinegar" right on the label. It's a good substitute. And sometimes I don't add the onions...my kids prefer it without. For that matter, I've even made it without the peanuts. We just love cucumbers. :)

1/4 c. dry roasted peanuts
1/4 c. or less yellow onion
3 large cucumbers
3 T. sugar
1/3. c rice vinegar
1/2 t. salt
pepper (to taste)

Peel and thinly slice cucumbers. Thinly slice onions. Combine vinegar, sugar, salt, and pepper and whisk until sugar disolves. Taste for seasoning, adding salt or sugar as necessary. (Should be both sweet and tart.) Stir in cucumbers and onion. Refrigerated till serving. Sprinkle salad with peanuts just before serving.
