My daughter made this and did a great job checking on it every 20 minutes or so. Me...I'd totally forget, and it'd be rock hard before I remembered. So I'm letting this be one of her specialities! :) So easy. So refreshing on super hot days!
2 c. filtered water
1/2 c. sugar
1 c. fresh lemon juice (about 3 large Sicilian lemons)
1 t. grated lemon zest
Squeeze lemons and remove any seeds from juice. Combine all ingredients until sugar is dissolved. Pour into a square 9 inch baking dish. Freeze until the mixture becomes slushy around the edges, about 30 minutes. Stir to break up ice crystals. Continue freezing, stirring the mixture every 20 minutes, until it is slushy, about an hour. Serves 4...or we stretched it into 5 smaller portions.
Note: The original recipe called for 1 c. of sugar, but we found that too sweet to our taste. Somewhere between 1/2 c. and a little more is just right for us, but you'll have to adjust to your own taste.
